From its birth as freshly pressed shiboritate, sake starts on a journey of many possible directions, depending on how it is handled. This, the first Tamagawa product to complete three full years in storage, has been lovingly bottle-aged ever since it was pasteurised and bottled.

Three years at sub-zero temperatures have smoothed the edges and rounded the body. The original fruity ginjo aromatics are in a glacially slow process of melding with smokey hints of age. Over-chilling stifles the subtle richness that time brings. If you have to drink it cold, drink it slowly to allow its layers time to show themselves.
