Sake reflects the Japanese appreciation of the seasons, accompanying the moon viewing parties of autumn and the celebrations of cherry blossom (sakura) in spring. Our brewers' work is defined by the seasons, and the coldest part of the year is set aside for the brewing of costly daiginjo sake, fermented long weeks at low temperatures.

Every year, when the plum blossoms bloom in February, our brewers press this special edition. With vivid flashes of flavour and a luscious bouquet of tropical fruits, this is the perfect companion for revelry under the cherry blossoms.
