"3U" Limited Edition Series

Tamagawa's winter highlights

After sake is pressed, it is conventionally filtered, diluted, pasteurised and aged before being bottled and sold. Tamagawa celebrates the process of ageing and evolution which is sake's great joy and too-rarely-celebrated pleasure, and this series represents the moment at which each sake starts its journey - as unpasteurised, unfiltered, undiluted ("3U") sake, straight from the press. Each limited edition is bottled to order only.

Where we brew multiple batches in the same style in a given season, it is possible to find sister products made from different individual batches. Other products represent a once-a-year-chance to try a specific Tamagawa product in its original, untouched form.

Our "regular" Iwai junmaiginjo is a blend of yamahai and conventional sokujo brews. These limited editions represent the one chance each year to sample the two ingredients individually. Both are full, rich and sweet.

The starting point of the spontaneous fermentation series. Its popularity has made it one of the most widely recognised Tamagawa labels. With all the "five flavours" straining at the leash, the full, potent flavours of this series offer drinkers plenty to get their teeth into. Alcohol around the 20% level.

Once a year we let our house yeast ferment to the limits. The yamahai character on the sister products is in red: for this extreme fermentation version alone, it comes in white, hence "White Label". More details at dedicated page.

Our perennial best seller, Tamagawa, owes its habit-forming depth of flavour to the yamahai sake with which it is blended. This limited edition represents the only chance in the year to drink the magic ingredient on its own before it is blended. This taste at this price is a once-a-year bargain.
