Pioneer of the "Spontaneous Fermentation" range

The first of the Tamagawa products to be made in the pre-modern fashion without adding pure yeast cultures. Rich in toothsome acids and amino acids, this potent brew has proved so popular in its limited edition forms that we have never managed to make a generally available pasteurised "regular" version.

Though widely considered one of the representative Tamagawa labels, it is paradoxically a standard without a "standard" form. The Tamagawa house yeast is exceptionally vigorous, so the undiluted limited editions in this series regularly exceed 20% alcohol.
